The pinnacle of highland agave aged 3 to 5 years. The nose has a mature aroma, balanced with gentle hints of citrus and sweet, cooked agave. The taste is enticing vanilla flavors, layered with caramel, chocolate and almond undertones. The finish is sweetly seductive with lingering vanilla impressions and a hint of oak for a warm sensuous finish.

REDBREAST 21 YEAR OLD – Single Pot Still
The nose has wonderful notes of almond, blackcurrant and autumn leaves, with lightly-singed melon and fresh ginger. A coppery note, with chamois leather and classic sherried raisin notes, plus flapjacks and syrup hints. The palate is unctuous, deep and silky-smooth, with bramble berries and copper to the fore. Develops raisin syrup, porridge, apple pie and hints of clove and cinnamon. The sherry shows well without being dominant and the spicy pot still character is present but more restrained than in the exuberant 12 year old. The finish is long, warming, honey and raisin with the spices lingering.

PAPPY VAN WINKLE 10 YEAR, 107 Proof
This wonderful bourbon is bottled as close to barrel proof as possible. A splash of Kentucky limestone well-water is added when the barrels are emptied for bottling. Thus, the whiskey is as smooth as any you will find. The more water you add to whiskey from its natural barrel proof to its bottle proof, the harsher it becomes. This 107 barrel proof seems to be just right. Rated 94 by the Beverage Tasting Institute.

PAPPY VAN WINKLE ‘SPECIAL RESERVE’ 12 YEAR, 90.4 Proof
This is the perfect combination of age and proof. This sweet, full bodied whiskey has been described by some as “Nectar”. The 12 years of aging and medium proof, seems to be just right in creating a very pleasant drink of whiskey. This fine bourbon can compete with any excellent cognac as an after dinner drink. The overall impression is rich and deep, well crafted, elegant stately, balanced beautifully! Rated 98 by the Beverage Tasting Institute.
